macaroni and cheese
This was my siblings' and my favorite food as kids, and we all still love it. We sometimes use rotini as the ridges seem to hold the cheese a little better than elbow macaroni.

Ingredients
- 3 cups elbow macaroni
- 1 cup velveeta
- 1 cup shredded cheddar
- 1/4 cup butter
- 3/8 cup flour
- 2 cups milk
How To Make macaroni and cheese

Step 1Cook the macaroni according to the package instructions.

Step 2Melt the butter in a small sauce pan. Add the flour and cook over medium heat for one minute, stirring constantly.

Step 3Gradually stir in the milk. Cook over medium heat, stirring constantly, until thick and bubbly (gradually turn up the heat if the mixture does not thicken).

Step 4Remove from heat, add cheese, and stir until melted. Add the sauce to the macaroni. Add salt, pepper, and/or paprika to taste.
