This was my siblings' and my favorite food as kids, and we all still love it. We sometimes use rotini as the ridges seem to hold the cheese a little better than elbow macaroni.

Ingredients

  • 3 cups elbow macaroni
  • 1 cup velveeta
  • 1 cup shredded cheddar
  • 1/4 cup butter
  • 3/8 cup flour
  • 2 cups milk

How To Make macaroni and cheese

  • Step 1
    Cook the macaroni according to the package instructions.
  • Step 2
    Melt the butter in a small sauce pan. Add the flour and cook over medium heat for one minute, stirring constantly.
  • Step 3
    Gradually stir in the milk. Cook over medium heat, stirring constantly, until thick and bubbly (gradually turn up the heat if the mixture does not thicken).
  • Step 4
    Remove from heat, add cheese, and stir until melted. Add the sauce to the macaroni. Add salt, pepper, and/or paprika to taste.
