john's shrimp scampi
My husband made Christmas Eve dinner, and folks... Seriously, this is so full of flavor! And easy to make. Don't let the ingredient list fool you. :)

Ingredients
- 2 pounds shrimp, raw, peeled & deveined
- 1 1/2 cups white wine
- 1/2 cup olive oil, light
- 1 cup butter, unsalted
- 6 cloves garlic, crushed
- 4 tablespoons margarine
- 1/2 teaspoon paprika
- 1/2 teaspoon old bay seasoning
- 1 tablespoon parsley flakes
- 2 pinches red pepper flakes
- 2 tablespoons lemon juice, fresh
- 1 pound linguine pasta
- 1 - head broccoli, fresh
- - parmesan cheese, fresh grated
- - flat leaf basil, for garnish
- - lemon wedges
How To Make john's shrimp scampi

Step 1Cook pasta according to package directions. Cut up broccoli head into florets. Steam the broccoli until bright green.

Step 2In a large saute pan, cook shrimp in the white wine, olive oil, butter, garlic, margarine, paprika, Old Bay & parsley for about 4-5 minutes until pink; DO NOT OVERCOOK!

Step 3Add in the broccoli, red pepper, salt & lemon juice. Saute for 1 minute.

Step 4Serve over linguine, or other pasta of choice.

Step 5Top with fresh grated Parmesan cheese, flat leaf basil for garnish, and lemon wedges.
