fettuccini alfredo with procioutto & peas

Ingredients
- 2 tablespoons olive oil, extra virgin
- 2 - shallots, minced
- 1 teaspoon minced garlic
- 1 cup heavy cream
- 1/4 pound prosciutto, julienned
- 1 cup frozen peas, thawed
- 1/2 cup fresh parm/reggiano
- 1 pound fettucine
- - salt and pepper to taste
How To Make fettuccini alfredo with procioutto & peas

Step 1Heat oil in skillet over medium heat and add shallots and garlic, sauté for a couple minutes or until tender. Add cream and cook for 1-2 minutes. Season with S&P to taste.

Step 2Add prosciutto and peas and toss gently to combine. Sprinkle cheese over top and stir to combine. cook until heated through.

Step 3Cook pasta until al dente, and drain, reserving 1/4 cup of the pasta water. Add reserved water and pasta to the skillet with sauce and toss to combine. Season with S&P and serve with more cheese.

Step 4I like to serve this with French bread, with Swiss cheese spread, and a good wine.
