fettuccine with broccoli

This is my version of a recipe in "The Vegetarian Cookbook". It has a buttery mustard sauce that is delicious.

Ingredients

  • 1 teaspoon dried basil, or use fresh, chopped fine
  • 1 teaspoon dried parsley, or use fresh, chopped fine
  • 2 - green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 - 2 tablespoons dijon mustard depending on your taste
  • 1/2 cup butter, room temperature
  • 1 pound broccoli, cut in florets
  • - salt and pepper to taste
  • 1 pound fettuccine pasta
  • - diced tomato or cherry tomatoes, halved, for garnish, optional

How To Make fettuccine with broccoli

  • Step 1
    In a bowl, mix together butter and dijon mustard. Stir in garlic, green onions, parsley, basil and pepper. Set aside.
  • Step 2
    Prepare pasta according to package directions.
  • Step 3
    While pasta is cooking, place broccoli florets along with a little water in a microwavable container and microwave about 3-4 minutes, until tender crisp. Drain. Season with salt.
  • Step 4
    Drain pasta. return to the pot. Gently stir in butter mixture and broccoli. (The heat from the pot and the pasta will melt the butter.) Adjust seasoning.
  • Step 5
    Serve. Garnish with the tomatoes, if desired.
