Creamy Bow Tie Pasta with Kale

4 slicebacon, cut into 1/4 in pieces
3 clovegarlic, smashed
2 cfresh kale, chopped
1/2 cparmigiano-reggiano, grated
1/2 cparmesan cheese
2 cbow-tie pasta, uncooked
How to Make Creamy Bow Tie Pasta with Kale
- In a large skillet at med heat cook bacon pieces until slightly brown, add the smashed garlic. Cook until bacon is crisp. Drain on paper towel and reserve 2 tablespoons of drippings.
- Heat the reserved drippings and add kale. Cook until wilted. Add 1/2 cup water and cook until tender.
Prepare bow tie pasta according to package. Drain and reserve 1 cup pasta water.
- In a large bowl whisk eggs and cheeses until combine.
Stir in a little of the hot pasta water and then the pasta and kale. Add the bacon pieces and mix until everything is combine.
