rice vinegar, unseasoned
1/3 c
vegetable oil
1 Tbsp
sriracha sauce
1 Tbsp
toasted sesame oil
8 c
summer vegetables, cut into matchsticks (cucumber, carrots, radishes, bell peppers, etc)
8 oz
soba noodles, may sub vermicelli if you can't get soba noodles
1 c
cilantro leaves and tender parts of stems, loosely packed
3
scallions, thinly sliced
1 Tbsp
sesame seeds, black or toasted white, your choice

How to Make Cold Sesame Noodles With Summer Vegetables

Step-by-Step

  • 1Whisk the first four ingredients in a large bowl. Add the vegetables; toss to coat. Season with salt and pepper.
  • 2Cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain. Run noodles under cold water to cool them; drain well and add to the bowl with the vegetables.
  • 3Add cilantro and scallions; season to taste with salt and pepper. Sprinkle sesame seeds over and serve.
