Ingredients
- 1/3 cup rice vinegar, unseasoned
- 1/3 cup vegetable oil
- 1 tablespoon sriracha sauce
- 1 tablespoon toasted sesame oil
- 8 cups summer vegetables, cut into matchsticks (cucumber, carrots, radishes, bell peppers, etc)
- 8 ounces soba noodles, may sub vermicelli if you can't get soba noodles
- 1 cup cilantro leaves and tender parts of stems, loosely packed
- 3 - scallions, thinly sliced
- 1 tablespoon sesame seeds, black or toasted white, your choice
How To Make cold sesame noodles with summer vegetables

Step 1Whisk the first four ingredients in a large bowl. Add the vegetables; toss to coat. Season with salt and pepper.

Step 2Cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain. Run noodles under cold water to cool them; drain well and add to the bowl with the vegetables.

Step 3Add cilantro and scallions; season to taste with salt and pepper. Sprinkle sesame seeds over and serve.
