broiled shrimp w/fresh tomatoes
This is EXCELLENT with Linguine Pasta- Simply cook the pasta, and toss with liquid from the pan in a large serving bowl and place shrimp on top!- Be sure to have warm, old-world style crust bread on the side for dipping! This is great on Christmas Eve, New Year's Eve or anytime at all!

- 1/2 cup olive oil, virgin
- 4 cloves fresh garlic; chopped
- 1/2 cup lemon juice
- 1 cup fresh tomatoes; chopped
- 1/2 teaspoon red flake pepper

How To Make broiled shrimp w/fresh tomatoes
-
Step 1Use a large, 1 inch sided metal pan suited for broiling (line with foil if you prefer) Spread raw, de-veined large shrimp in the pan evenly. You can remove the tails if you prefer, but I sometimes leave tails on.
-
Step 2Combine chopped tomatoes, parsley, salt and pepper, olive oil, and lemon juice in a bowl. Evenly pour all contents over the shrimp in the pan.
-
Step 3Broil shrimp in marinade about 4 inches from heat for apprx 4 minutes- Everyone's oven is different, adjust times as needed! You also can turn shrimp as needed.
-
Step 4Voila! Remove from heat and you are done!
