Ingredients

  • 1 lb
    italian seasoned turkey meat
  • 1
    can 15 oz. tomato sauce
  • 1
    can 15 oz. italian seasoned diced tomatoes
  • 1
    can 8 oz. tomato paste
  • 1
    medium onion chopped
  • 2
    chopped stalks celery with leaves
  • 1 tsp
    chopped garlic
  • 1 1/2 tsp
    basil
  • 1 tsp
    dried parsley
  • 1/4 tsp
    brown sugar
  • 1/2 c
    hearty red wine
  • 1 c
    water
  • 1/4 tsp
    red pepper flakes
  • ·
    salt & pepper to taste
  • 1 Tbsp
    good olive oil

How to Make Antonio's Sunday Gravy

Step-by-Step

  1. Brown turkey meat in olive oil; remove from Dutch oven, reserve drippings, set aside
  2. Sauté chopped onion and celery in drippings about 10 minutes; add garlic, basil, parsley, and red pepper.
  3. Cook a few minutes longer, then deglaze the pot with the vegetables and seasonings with the red wine.
  4. Add tomato paste, wisk together to make a roux. Add browned meat; tomato sauce, chopped tomatoes, and water.
  5. Add brown sugar and stir. Bring to a boil, lower to medium low heat and cook covered 1 hour, tilting the lid the final 15 minutes. Serve with your favorite noodles.
