american chop suey
This is a classic, quick and easy pasta dish that I have made forever. I do play with ingredients as far as adding mushrooms, diced tomatoes and grated carrots in addition to switch it up a bit and I may play with seasoning as well (I do add a little curry sometimes!) Make it your own and enjoy!

Ingredients
- 2 tablespoons olive oil
- 1 large green pepper (rough chop)
- 1 medium onion (rough chop)
- 2 cloves garlic (minced)
- 1 pound ground beef
- 1 jar favorite tomato sauce (i use victoria's marinara)
- 1 can cambell's tomato soup
- 2 tablespoons tomato paste
- 1/2 teaspoon oregano (dried)
- 1/2 teaspoon basil (dried)
- 1/2 teaspoon crushed red pepper (optional)
- - salt & pepper (to taste)
- 1 box pasta (i use cavatappi)

Step 11) Sauté peppers and onions in olive oil over medium heat. When Onions are tender, add garlic. Cook for a few minutes until garlic is fragrant. Set aside.

Step 22) Brown beef in deep pan (you will be adding sauce and veggies to this.) Drain excess fat from pan, I leave a little for flavor.

Step 33) While browning meat, bring pot of water to a boil with salt and a little olive oil.

Step 44) Add veggies, tomato paste, can of soup, tomato sauce and seasoning (to taste)to ground beef, stir and simmer for a few minutes.

Step 55) Once pasta is cooked, drain and pour sauce onto pasta and stir. Enjoy!
