This was a big hit with the hubby, I enjoyed it too. If you don't have dry mustard just use regular mustard. I hope if anyone tries this you will enjoy it.

Ingredients

  • 6 - wieners, cut into thin bite size slices
  • 3 medium potatoes, diced
  • 1/2 large onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon dry mustard
  • 2 tablespoons regular mustard
  • 2 tablespoons tomato paste
  • - salt and pepper
  • 1/4 cup olive oil (enough to coat potatoes)
  • - cheddar cheese
  • - soft tortillas

  • Step 1
    In skillet heat olive oil, add potatoes, onions, salt and pepper. Cook about 8 minutes add wieners, chili powder, both mustards, and tomato past. Cook until potatoes are soft about another 5 minutes or so. Put 1/4-1/2 cup of the mixture on a soft tortilla, top with shredded cheddar cheese, roll tortilla. In skillet over medium heat brown both sides of the tortilla. I served it with mayonnaise, ketchup and mustard mixed together.
