spicy spanish rice

I actually combined ingredients from 3 different recipes to make this. Unstuffed Pepper Casserole, Stuffed Peppers & Spanish rice, from this site. When I served it with a salad to my husband last night, he said "I'll just have the salad". He finally took a bite, & ended up going back for seconds! LOL! Thanks for the inspiration! I think we found a winner! I will add pics next time I make this.

Ingredients

  • 1 pound hot pork sausage, (jimmy dean)
  • 1 - green bell pepper, diced
  • 1 - red bell pepper,diced
  • 1 medium onion,diced
  • 1 can tomato sauce,15 oz
  • 1 can petite diced tomatoes
  • 2 cups water
  • 1/4 cup hot banana peppers,diced
  • 2 - chicken boullion cubes
  • 1 tablespoon garlic powder
  • 1 tablespoon italian seasoning
  • 1/4 cup shredded parmesean cheese
  • 1 cup italian blend cheese
  • 1 tablespoon worcestershire sauce
  • 1 1/2 cups long grain rice(uncooked)

How To Make spicy spanish rice

  • Step 1
    Preheat oven to 350. In a large oven proof pot, brown sausage,bell peppers, & onions. Drain if needed, mine didn't.
  • Step 2
    Dissolve boullion cubes in water in microwave.Add to sausage & veggies.
  • Step 3
    Add tomato sauce, tomatoes, seasonings, hot peppers, &worchestershire sauce, stir to combine. Simmer over medium heat for about 10 min.
  • Step 4
    Add rice, stir. Add parmesean cheese & 1/2 cup italian blend,stir.
  • Step 5
    Put in oven uncovered for 35-40 min, stirring ocassionally. If it seems too dry, add a little water.
  • Step 6
    Top with the rest of the cheese & return to oven until cheese is melted. Allow to sit for 5 minutes before serving.
