Ingredients
- 1 package smoked sausage, sliced
- 1/2 - orange bell pepper, thinly sliced
- 1/2 - yellow bell pepper, thinly sliced
- 1 tablespoon tomato paste
- 2 cloves garlic, minced
- 1 can green chilies
- 1 teaspoon ginger
- 1 tablespoon red curry paste, thia
- 1/2 cup red wine
- 1/2 cup water
- 2 tablespoons greek plain yogurt
- 2 medium sweet onions

How To Make red thai curry with smoked sausage and baked onion

Step 1Preheat oven 400 F. Peel onions thoroughly, slice the top and bottom of onions. Then slice them in half along the equator. Sprinkle olive oil in a baking dish. Place onions with the wide part facing up. Sprinkle olive oil on top. cover with foil. Bake for 20 minutes. Remove foil and cook 20 minutes more until onions are soft and slightly caramelized.

Step 2In the last 10 minutes of cooking. Heat a medium pan over med-high heat. Add bell peppers and sausage and cook until sausage is brown and peppers are soft.

Step 3Add tomato paste, garlic, ginger, and green chilies. Cook for a minute. Raise heat and stir in wine. Stir and add water.Lower heat and Cook together for five minutes. Remove from heat and stir in Greek yogurt. Serve over rice and with baked onion.
