1Add cut up bacon to dutch oven. I choose to add my onions, celery and bell pepper at this time and cook them all together so they all get a wonderful carmelization.. Slice smoked sausage in half then slice it into bite sized pieces and add to veggies and bacon. When all is carmelized. Add about 6 cups of water and the drained and rinsed soaked beans, and the remaining ingredients. Bring to a boil and cover and simmer. This will actually be done in about 45 minutes but I like to cook mine for 3-5 hours, the flavors marry and it is wonderful. Serve over rice.
