    small red kidney beans, picked and soaked overnight
  • 6 c
  • 4
    celery stalks, diced
  • 1
    bell pepper, chopped
  • 2
    onions, diced
  • 2 lb
    smoked sausage
  • 2 Tbsp
    creole seasoning
  • 1/2 lb
    bacon, cut up
  • 2
    bay leaves

How to Make Red Beans and Rice


  1. Add cut up bacon to dutch oven. I choose to add my onions, celery and bell pepper at this time and cook them all together so they all get a wonderful carmelization.. Slice smoked sausage in half then slice it into bite sized pieces and add to veggies and bacon. When all is carmelized. Add about 6 cups of water and the drained and rinsed soaked beans, and the remaining ingredients. Bring to a boil and cover and simmer. This will actually be done in about 45 minutes but I like to cook mine for 3-5 hours, the flavors marry and it is wonderful. Serve over rice.
