Ingredients

1 lb
dry red beans
1/2 lb
ham, cubed small
1 large
onion, chopped
1 c
chopped green onion, white & green parts
1/4 c
chopped green bell pepper
1/4 c
chopped fresh parsley
1/2 tsp
basil
2
bay leaves
1/4 c
butter
1/2 tsp
salt
1 tsp
cayenne pepper

How to Make Red Bean and Rice

Step-by-Step

  • 1Place beans in a large pot. Cover with water. Bring to a rolling boil for 2 minutes. Remove from heat and let soak overnight.
  • 2In the morning, Bring to a boil again. Add remaining ingredients. Reduce heat and simmer for at least 3 hours. The beans will become creamy but most will remain whole.
  • 3Add water while cooking if needed.
  • 4Serve over fluffy long grain rice.
