Ingredients
- 1 pound dry red beans
- 1/2 pound ham, cubed small
- 1 large onion, chopped
- 1 cup chopped green onion, white & green parts
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon basil
- 2 - bay leaves
- 1/4 cup butter
- 1/2 teaspoon salt
- 1 teaspoon cayenne pepper
How To Make red bean and rice

Step 1Place beans in a large pot. Cover with water. Bring to a rolling boil for 2 minutes. Remove from heat and let soak overnight.

Step 2In the morning, Bring to a boil again. Add remaining ingredients. Reduce heat and simmer for at least 3 hours. The beans will become creamy but most will remain whole.

Step 3Add water while cooking if needed.

Step 4Serve over fluffy long grain rice.
