ravioli with sausage and peppers
Everyone has a good recipe for sausage and peppers. I make mine with a slight twist. I use stewed tomatoes! They add a delicious sweetness to the sauce without adding sugar. Don't tell my husband my secret, though. He's always asking, "How do you get that delicious flavor in this sauce?" Adding ravioli makes it into a filling meal. I made this for a friend when she came out of the hospital. She and her family loved it!

This ravioli with sausage and peppers is an easy meal to throw together. Sausage and peppers is a classic dish and this recipe adds a ravioli twist. Red peppers and onions give the tomato sauce a nice flavor. There is not a ton of seasoning so the hit of basil shines in the sauce. Combined with the Italian sausage and mini cheese ravioli, it's a comforting dinner. Serving with warm crusty bread is a must.
Ingredients
- 24 ounces mini cheese ravioli
- 2 large red peppers
- 1 large sweet Vidalia onion
- 1 pound sweet Italian sausage, in casing, cut in 1" pieces
- 1/2 cup oil (I use vegetable oil for this recipe so that the "olive" taste doesn't interfere with the sweetness of the sauce)
- 2 cans stewed tomatoes, original flavor (14.5 oz each)
- 1/2 teaspoon dried basil
- - salt, to taste
- black pepper to taste
- - grated Locatelli cheese, can also use grated Romano or Parmesan cheese
How To Make ravioli with sausage and peppers

Step 1Cook ravioli according to package directions until al dente (slightly firm on the edges.)

Step 2When draining ravioli, save a cup of the pasta water to add to the sauce later if needed. Return ravioli to the pot.

Step 3Remove seeds from peppers and cut into 1" squares (or bite-size pieces). Peel onion and slice into strips.

Step 4Saute sausage in oil until it is no longer pink.

Step 5Add peppers and onions to the skillet. Saute until sausage is browned and peppers and onions are tender.

Step 6Put stewed tomatoes in a blender until "sauce" consistency.

Step 7Add tomatoes to the skillet with the sausage and peppers. Simmer until the tomato sauce is cooked; about 15 minutes.

Step 8Add pasta water if it needs to be thinned out some.

Step 9Sprinkle with basil, salt, and pepper.

Step 10Mix in ravioli.

Step 11Mix in a little grated cheese. Serve with some crusty bread.
