I found this recipe some time ago who knows where and had not gotten around to making it. When I did make it, I was surprised to see how fast and easy this dish is prepared - and how delicious it is!

Ingredients
- 4 - boneless, skinless chicken breasts
- 1/4 cup olive oil
- 4 - cloves garlic, minced
- 1 large shallot, sliced thinly
- 1 cup chicken stock
- 1/2 cup white wine
- 6 ounces sliced mushrooms
- 1 cup fresh rasberries
- 1 tablespoon unsalted butter
- 1 teaspoon grated lemon zest
- 1 tablespoon balsamic vinegar
- dash kosher salt/black pepper
How To Make rasberry chicken

Step 1Sear chicken 3 minutes on each side in the olive oil. Remove from heat. Same skillet add garlic and shallot, cook one minute.

Step 2Add chicken stock and wine. cook until reduced, about 10 minutes. Add the sliced mushrooms and lower heat to simmer.

Step 3Return chicken to the skillet, cover and cook until chicken is cooked, about 10 minutes. Add rasberries, butter, balsamic vinegar and lemon zest. Cook uncovered one minute.
