Original recipe came from one of the woman's magazines in the checkout at the grocery store.

Ingredients

  • 3 - large eggs, beaten
  • 1/2 cup milk
  • 3/4 cup light mayonnaise
  • 2 tablespoons flour
  • 1-10 oz. package frozen, chopped spinach, thawed and squeezed dry
  • 1/2 cup shredded cheese, cheddar or swiss
  • 1/2 cup chopped scallions or green onions

How To Make popeye pie

  • Step 1
    Preheat oven to 375 degrees. Combine all ingredients in a bowl and mix well.
  • Step 2
    Spray a 9" glass pie plate or 8" square baking dish. Pour in egg mixture.
  • Step 3
    Bake for 45 minutes or until light brown and puffy. Serve immediately. Leftovers also taste good cold.
  • Step 4
    Note: You can substitute light ingredients like egg substitute, skim milk, and lower fat cheese with little effect on the taste.
