Original recipe came from one of the woman's magazines in the checkout at the grocery store.

  • 3
    large eggs, beaten
  • 1/2 c
  • 3/4 c
    light mayonnaise
  • 2 Tbsp
  • 1-10 oz. pkg
    frozen, chopped spinach, thawed and squeezed dry
  • 1/2 c
    shredded cheese, cheddar or swiss
  • 1/2 c
    chopped scallions or green onions

How to Make Popeye Pie


  1. Preheat oven to 375 degrees. Combine all ingredients in a bowl and mix well.
  2. Spray a 9" glass pie plate or 8" square baking dish. Pour in egg mixture.
  3. Bake for 45 minutes or until light brown and puffy. Serve immediately. Leftovers also taste good cold.
  4. Note: You can substitute light ingredients like egg substitute, skim milk, and lower fat cheese with little effect on the taste.
