Ingredients
- 3 - large eggs, beaten
- 1/2 cup milk
- 3/4 cup light mayonnaise
- 2 tablespoons flour
- 1-10 oz. package frozen, chopped spinach, thawed and squeezed dry
- 1/2 cup shredded cheese, cheddar or swiss
- 1/2 cup chopped scallions or green onions
How To Make popeye pie

Step 1Preheat oven to 375 degrees. Combine all ingredients in a bowl and mix well.

Step 2Spray a 9" glass pie plate or 8" square baking dish. Pour in egg mixture.

Step 3Bake for 45 minutes or until light brown and puffy. Serve immediately. Leftovers also taste good cold.

Step 4Note: You can substitute light ingredients like egg substitute, skim milk, and lower fat cheese with little effect on the taste.
