While at my local grocer's I saw that eggplant was on sale so I bought one. I wanted a recipe that didn't use sauce so I searched the Internet and found this recipe. The eggplant was so tender and good and I will be using this recipe in the future.

Ingredients

  • 1/2 cup mayonnaise (fat free)
  • 1 tablespoon minced onion
  • 1 - eggplant (about 12 1/2" slices)
  • 1/3 cup bread crumbs (i used italian)
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon dried italian seasoning

How To Make oven fried eggplant - steph

  • Step 1
    Combine the mayonnaise and onions and mix well. Spread both sides of the sliced eggplant with the mayo mixture. Combine all other ingredients together and dredge eggplant in the bread crumb mixture.
  • Step 2
    Place on greased baking sheet (use cooking spray) and bake at 425 degrees for 12 minutes and then turn over and bake another 12 minutes.
  • Step 3
    I used regular mayonnaise as I did not have fat free and used Italian bread crumbs as I think they have more flavor. ENJOY!
