One Skillet Smoked Sausage and Squash

You can prepare the vegetables in advance, makes it a lot easier if you do.

Ingredients

  • 1 md
    zuccini cubed
  • 2 md
    yellow squash cubed
  • 3 c
    butternut squash cubed
  • 1 pkg
    sliced baby bella mushrooms
  • 1 stick
    butter (you can use margarine)
  • 1 md
    onion cut into chunks
  • 1 md
    green bell pepper cut into chunks
  • 1 pkg
    petite baby carrots
  • 1 pkg
    smoked sausage sliced ( can turkey sausage)
  • 2 Tbsp
    minced garlic

How To Make

    Melt the stick of butter over medium heat in a large skillet.
  • 2
    Add carrots first because they take longer to cook, cook for 5 minutes over medium heat stirring often.

    Add the remaining vegetables and minced garlic stir together.
  • 4
    Cook the vegetable until tender. Add the sausage and heat throughly.
  • 5
    Do not cover the skillet. The moisture from the squash will not cook off.
