Had a few things to use up in refridgerator so this is what I come up with.

Ingredients
- 1/2 pound turkey sausage
- 5 large mushrooms (diced)
- 5 - mini red and yellow peppers (diced)
- 3 tablespoons coconut oil
- 1 dash cumin
- 1 cup low fat mexican blend cheese
- 2 medium whole wheat tortillas (95% fat free)
How To Make linda's what to do breakfast

Step 1Put coconut oil in saute pan.

Step 2Add Sausage, peppers,and mushrooms. Cook till sausage is done and veggies are tender. Add dash of cumin.

Step 3Spray cookie sheet. Put first tortilla on cover with turkey and veggie mixture.Add 3/4 cup of mexican blend cheese. Top with second tortilla spray lightly sprinkle with remaining 1/4 cup cheese

Step 4Broil about 3 minutes or until cheese melts.
