Had a few things to use up in refridgerator so this is what I come up with.

Ingredients

  • 1/2 pound turkey sausage
  • 5 large mushrooms (diced)
  • 5 - mini red and yellow peppers (diced)
  • 3 tablespoons coconut oil
  • 1 dash cumin
  • 1 cup low fat mexican blend cheese
  • 2 medium whole wheat tortillas (95% fat free)

How To Make linda's what to do breakfast

  • Step 1
    Put coconut oil in saute pan.
  • Step 2
    Add Sausage, peppers,and mushrooms. Cook till sausage is done and veggies are tender. Add dash of cumin.
  • Step 3
    Spray cookie sheet. Put first tortilla on cover with turkey and veggie mixture.Add 3/4 cup of mexican blend cheese. Top with second tortilla spray lightly sprinkle with remaining 1/4 cup cheese
  • Step 4
    Broil about 3 minutes or until cheese melts.
