Had a few things to use up in refridgerator so this is what I come up with.

1/2 lb
turkey sausage
5 large
mushrooms (diced)
mini red and yellow peppers (diced)
3 Tbsp
coconut oil
1 dash(es)
1 c
low fat mexican blend cheese
2 medium
whole wheat tortillas (95% fat free)

How to Make Linda's What To Do Breakfast


  • 1Put coconut oil in saute pan.
  • 2Add Sausage, peppers,and mushrooms. Cook till sausage is done and veggies are tender. Add dash of cumin.
  • 3Spray cookie sheet. Put first tortilla on cover with turkey and veggie mixture.Add 3/4 cup of mexican blend cheese. Top with second tortilla spray lightly sprinkle with remaining 1/4 cup cheese
  • 4Broil about 3 minutes or until cheese melts.
