Had a few things to use up in refridgerator so this is what I come up with.

Add to Grocery List

  • 1/2 lb
    turkey sausage
  • 5 large
    mushrooms (diced)
  • 5
    mini red and yellow peppers (diced)
  • 3 Tbsp
    coconut oil
  • 1 dash(es)
  • 1 c
    low fat mexican blend cheese
  • 2 medium
    whole wheat tortillas (95% fat free)

How to Make Linda's What To Do Breakfast


  1. Put coconut oil in saute pan.
  2. Add Sausage, peppers,and mushrooms. Cook till sausage is done and veggies are tender. Add dash of cumin.
  3. Spray cookie sheet. Put first tortilla on cover with turkey and veggie mixture.Add 3/4 cup of mexican blend cheese. Top with second tortilla spray lightly sprinkle with remaining 1/4 cup cheese
  4. Broil about 3 minutes or until cheese melts.
