I adore leftovers, they are a treasure in my house for making quick suppers. When I grill or smoke I always go overboard on the number of things I have cooking, and this is one of the reasons why. This dish could totally be done on the grill.

Ingredients

  • 5 small russet potatoes, wash and cubed
  • 2 cups grilled sausage, cubed
  • 1/2 small diced onion
  • 1 - anaheim pepper, diced
  • - **shredded cheese
  • - **chopped cilantro
  • - **seasoning of choice

How To Make grilled sausage and potato hash

  • Step 1
    You can peel your potatoes, but I enjoy the rusticness of leaving the skin on, just wash well. Chop onion and pepper, add to pan with potatoes.
  • Step 2
    Slow pan roast potatoes in oil of choice. Today I had some bacon fat so I used that. Once potatoes are tender, add in the sausage, stir to heat.
  • Step 3
    Garnish with grated cheese,cilantro, pico de gallo or salsa. I always like to serve sunny side up eggs with hash.
