Ingredients

  • 2 can(s)
    garbanzo beans/drained
  • 1
    spanish chorizo/sliced thin
  • 1/2 lb
    ham/cut into cubes
  • 1/2 c
    onion
  • 1/2
    bell pepper
  • 1/2 jar(s)
    red pimentos
  • 3
    garlic cloves/smashed
  • 1 large
    can fire roasted tomatoes
  • 1 c
    dry cooking wine
  • ·
    salt/pepper
  • pinch
    red pepper flakes ( optional)
  • 1 Tbsp
    olive oil
  • 1/2 c
    green olives
  • 1 sprig(s)
    cilantro
  • 1 sprig(s)
    parsley

How to Make Garbanzo Stew

Step-by-Step

  1. slice the chorizo and cube the ham ( cooking ham, not sweet)chop the onions, peppers and garlic.
  2. In a large skillet with olive oil saute everything together...drain the garbanzo beans ( soaked in water and salt) and rinse well.
  3. add to the skillet and combine...add the can of tomatoes and wine.
  4. add salt and pepper to taste, add in the olives, cilantro and parsely...simmer on low for at least 30 mins, serve with rice.
