~ creole shrimp ~
I had a bag of thawed shrimp and some tomatoes I needed to use up. This dish was delicious over my Basmati rice. Just the right amount of spice. Quick and easy...what's not to like? Enjoy!

Ingredients
- 1 tablespoon butter + 2 tablespoons extra virgin olive oil
- 3 cloves minced, garlic
- 1 pound med - large shrimp, peeled and deveined
- 2 teaspoons tony chachere's, creole or cajun seasoning
- 4 - roma tomatoes, chopped
- - kosher salt & cracked black pepper
- 6 - 7 - green onion, chopped
- 1/2 - lemon squeezed
How To Make ~ creole shrimp ~

Step 1In a large skillet, melt butter with olive oil.

Step 2Add the shrimp and cook until turning opaque.

Step 3Add the Cajun seasoning, stir. Now, add salt and pepper to taste. Add the tomatoes and green onion, stir and simmer for 3 - 4 minutes. Squeeze the lemon over all, stir and serve over hot rice immediately. I served over my Saffron Basmati rice...was delicious!
