~ creole shrimp ~

I had a bag of thawed shrimp and some tomatoes I needed to use up. This dish was delicious over my Basmati rice. Just the right amount of spice. Quick and easy...what's not to like? Enjoy!

Ingredients

  • 1 tablespoon butter + 2 tablespoons extra virgin olive oil
  • 3 cloves minced, garlic
  • 1 pound med - large shrimp, peeled and deveined
  • 2 teaspoons tony chachere's, creole or cajun seasoning
  • 4 - roma tomatoes, chopped
  • - kosher salt & cracked black pepper
  • 6 - 7 - green onion, chopped
  • 1/2 - lemon squeezed

How To Make ~ creole shrimp ~

  • Step 1
    In a large skillet, melt butter with olive oil.
  • Step 2
    Add the shrimp and cook until turning opaque.
  • Step 3
    Add the Cajun seasoning, stir. Now, add salt and pepper to taste. Add the tomatoes and green onion, stir and simmer for 3 - 4 minutes. Squeeze the lemon over all, stir and serve over hot rice immediately. I served over my Saffron Basmati rice...was delicious!
