We love Mexican food.I love to cook it too! When I make enchiladas for a large group,I make cheese enchiladas and serve chicken in green chili or beef in red chili to top them in case any one wants meat. That way I'm not making several kinds of enchiladas. A good friend of mine uses Mozzarella,so I began to add it too,I prefer white cheeses. You can make your own green enchilada sauce and sometimes I do,but I also like La Victoria green sauce. For the topping ,you can use jarred salsa or homemade pico de gallo is good.
