We love Mexican food.I love to cook it too! When I make enchiladas for a large group,I make cheese enchiladas and serve chicken in green chili or beef in red chili to top them in case any one wants meat.That way I'm not making several kinds of enchiladas. A good friend of mine uses Mozzarella,so I began to add it too,I prefer white cheeses. You can make your own green enchilada sauce and sometimes I do,but I also like La Victoria green sauce.For the topping ,you can use jarred salsa or homemade pico de gallo is good.

  • - canola oil
  • - corn tortillas
  • - colby cheese,grated
  • - jack cheese,grated
  • - white onions,minced
  • - green enchilada sauce
  • - mozzarella cheese,grated
  • - green onions,minced
  • - sour cream
  • - black olives,sliced.optional
  • - tomato salsa

How To Make cheese enchiladas

  • Step 1
    Preheat oven to 375 degrees.Heat oil in a skillet,dip tortillas 1 at a time,turn over just until soften,stack on a plate until all are done.In a bowl, combine shredded cheeses and chopped onion. Lay tortilla flat on clean surface and place about two tablespoons of cheese mixture across tortilla; gently roll tortilla up like a cigar and place in lightly greased baking dish. Repeat with remaining cheese mixture. Pour enchilada sauce generously over the prepared enchiladas until completely covered in sauce. Sprinkle with cheese and green onions. Add olives(optional) Place in oven and bake for about 20-25 minutes until sauce is bubbly and cheese is completely melted. Top with a dollop of sour cream and salsa.
