black bean n rice

If you want you can add more tofu or spices. I use all fresh ingredient except the frozen corn but if you don't have tomatoes you can use 1 can of diced tomatoes. Juices and all.

Ingredients
- 1 cup brown rice, cooked
- 1 can black beans rinsed & drained
- 1/2 cup frozen corn thawed
- 1/2 - onion, diced
- 1/2 - sweet bell pepper diced
- 2 - roma tomates diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1 1/2 teaspoons creole seasoning
- - cooking spray
- 1 tablespoon olive iol
How To Make black bean n rice

Step 1In a 3 quart sauce pan start cooking brown rice in about a cup of water. (I use rice that needs to cook for about half hour.) add salt to flavor.

Step 2In a fry pan add a Table spoon of olive oil and the add onion and bell pepper. Sprinkle with salt and pepper. Cook until lightly soft. Sprinkle with creole seasoning.

Step 3Chop tomatoes.

Step 4When the rice is done add beans, tomatoes, onion, peppers and all the seasoning. Stir.

Step 5Taste . If you like it a little more spicy then add more creole seasoning. Stir and heat on low for a few minuet. then sever.
