We had left over ground turkey that needed to be used, but I couldn't find a ground turkey recipe that would work for my family so I created one... The chorizo can be optional, I had family members who either do not eat spicy (even mildly spicy) or do not eat pork (though chorizo is available in beef), and so I made half chorizo-free. They enjoyed it. For me, I like the kick of the Mexican spiciness! Enjoy!

Ingredients

  • 1 1/2 pounds ground turkey
  • 6 ounces chorizo (mexican sausage, mild or medium) uncooked, crumbled
  • 1 - large egg
  • 1 cup old fashioned whole grain oats
  • 1 tablespoon mrs. dash (salt alternative seasoning)
  • 3/4 cup shredded sharp cheddar cheese

How To Make turkey meatloaf muffins

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Mix all ingredients. Don't be afraid to get your hands dirty!
  • Step 3
    Pat generous portions of mix into prepared muffin tin.
  • Step 4
    Bake for about 30 minutes/180 degrees.
