This is a great Atkins friendly recipe that is really tasty and your family will never know it's low carb.

Ingredients

2 large
green peppers cut length wise
1 lb
ground beef
1/4 c
onion chopped
1 clove
garlik, minced
1/2 c
tomatoes chopped
4 oz
cheddar cheese shredded
2 oz
cheddar cheese shredded for topping
1/2 tsp
salt
1/2 tsp
pepper

Step-By-Step

1In a large pot, bring about half a potful of water to a boil. Add the peppers and boil for 3 minutes; drain.
2In the same pot, brown the hamburger, onion and garlic. Drain the fat and stir in the tomatoes and seasonings.
3Cook until the tomatoes are hot; remove from the heat and stir in the 4 ounces of cheese.
4Put the pepper halves in a greased 8x8" baking pan and fill with the meat mixture. Sprinkle the extra cheese on top, if using.
5Bake at 350ยบ for 20-25 minutes.
6Per Serving: 388 Calories; 27g Fat; 30g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs
