~ mom's meatloaf ~
I've done some tweaking to my Moms original recipe...just a little more of this and that. I can never leave well enough alone...LOL! She enjoys my version as well. That makes me happy! I hope you'll try it sometime...add other spices to your liking...make it your own... Enjoy!

Ingredients
- 2 pounds ground beef
- 1/4 medium green bell pepper, finely chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 - 4 slices bread, ground into crumbs
- 1/4 - 2/3 cup milk
- 3 - eggs, beaten
- 1 teaspoon season salt or to taste
- 1/2 teaspoon pepper or to taste
- 1/2 cup shredded parmesan cheese
- 1 1/2 teaspoons better than buillon, beef paste
- 3 - 4 tablespoons chopped italian or regular parsley
- TOPPING - OPTIONAL
- 1/2 cup ketchup
- 1 teaspoon each - ground dry mustard & a-1 steak sauce
- 1/8 cup heaping brown sugar
How To Make ~ mom's meatloaf ~

Step 1In a food processor I pulse bread until fine crumbs are produced. Place in a small bowl and add the milk to moisten crumbs. Toss and set aside.

Step 2In the rinsed bowl, I place green pepper, onion and garlic and pulse until small chopped & uniform. ( this can be done by chopping as well, I find my processor is so much quicker. )

Step 3In a large bowl, crumble in the ground beef, to this add the seasonings, parsley, eggs, bread crumbs, pepper, onion, garlic, cheese.

Step 4I then place this in my kitchen aid mixer bowl, and mix with the paddle attachment. It just tends to keep from over working the meat. Renders a more tender meatloaf. ( If you don't have, just use hands and toss together, trying not to overwork.)

Step 5Preheat oven to 350 degree F. I then spray my 3 quart casserole dish with non stick cooking spray. Shape meat mixture into a loaf. Place in casserole dish. You can use a roaster with rack, or a foil lined sheet pan. I just prefer my casserole dish.

Step 6Mix sauce for top of meatloaf ( if using ) In a small bowl, mix ingredients until thoroughly blended. Spread half of the mixture evenly over top of loaf. Place in oven and bake for 1 hour 15 minutes, or until completely cooked in the center.

Step 7When loaf is completely cooked, take from oven and tent with foil. Leave set for 10 - 15 minutes before cutting. Warm left over sauce if you prefer for dipping.
