I've done some tweaking to my Moms original recipe...just a little more of this and that. I can never leave well enough alone...LOL! She enjoys my version as well. That makes me happy! I hope you'll try it sometime...add other spices to your liking...make it your own... Enjoy!

Ingredients For ~ mom's meatloaf ~

  • 2 lb
    ground beef
  • 1/4 md
    green bell pepper, finely chopped
  • 1 md
    onion, finely chopped
  • 2 clove
    garlic, minced
  • 3 - 4 slice
    bread, ground into crumbs
  • 1/4 - 2/3 c
    milk
  • 3
    eggs, beaten
  • 1 tsp
    season salt or to taste
  • 1/2 tsp
    pepper or to taste
  • 1/2 c
    shredded parmesan cheese
  • 1 1/2 tsp
    better than buillon, beef paste
  • 3 - 4 Tbsp
    chopped italian or regular parsley
  • TOPPING - OPTIONAL
  • 1/2 c
    ketchup
  • 1 tsp
    each - ground dry mustard & a-1 steak sauce
  • 1/8 c
    heaping brown sugar

How To Make ~ mom's meatloaf ~

    In a food processor I pulse bread until fine crumbs are produced. Place in a small bowl and add the milk to moisten crumbs. Toss and set aside.

    In the rinsed bowl, I place green pepper, onion and garlic and pulse until small chopped & uniform. ( this can be done by chopping as well, I find my processor is so much quicker. )

    In a large bowl, crumble in the ground beef, to this add the seasonings, parsley, eggs, bread crumbs, pepper, onion, garlic, cheese.

    I then place this in my kitchen aid mixer bowl, and mix with the paddle attachment. It just tends to keep from over working the meat. Renders a more tender meatloaf. ( If you don't have, just use hands and toss together, trying not to overwork.)

    Preheat oven to 350 degree F. I then spray my 3 quart casserole dish with non stick cooking spray. Shape meat mixture into a loaf. Place in casserole dish. You can use a roaster with rack, or a foil lined sheet pan. I just prefer my casserole dish.

    Mix sauce for top of meatloaf ( if using ) In a small bowl, mix ingredients until thoroughly blended. Spread half of the mixture evenly over top of loaf. Place in oven and bake for 1 hour 15 minutes, or until completely cooked in the center.

    When loaf is completely cooked, take from oven and tent with foil. Leave set for 10 - 15 minutes before cutting. Warm left over sauce if you prefer for dipping.
