I love meatloaf, but not the day it's cooked. I love cold meatloaf sandwiches. :-) I ate many of these in my lifetime!!

Ingredients For mom's meatloaf

  • 2 lb
    ground beef (bottom round preferred)
  • 2 c
    corn flakes (or bread crumbs)
  • 1
    egg-beaten
  • 1 c
    tomato soup (or tomato juice)
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 c
    boiling water
  • 4 slice
    bacon
  • ***PREHEAT OVEN TO 350 DEGREES***

How To Make mom's meatloaf

    In a large bowl, combine the beef, corn flakes (or bread crumbs) and beaten egg. Add the tomato soup (or juice) and seasonings. Mix thoroughly. Pack firmly into a loaf pan to shape the meatloaf. Turn the meatloaf out into a small roasting pan. Pour the boiling water over the meatloaf. Place the 4 slices of bacon across the top of the meatloaf. Bake at 350* for 30 to 35 minutes.
