I love meatloaf, but not the day it's cooked. I love cold meatloaf sandwiches. :-) I ate many of these in my lifetime!!

Ingredients
- 2 pounds ground beef (bottom round preferred)
- 2 cups corn flakes (or bread crumbs)
- 1 - egg-beaten
- 1 cup tomato soup (or tomato juice)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup boiling water
- 4 slices bacon
- ***PREHEAT OVEN TO 350 DEGREES***
How To Make mom's meatloaf

Step 1In a large bowl, combine the beef, corn flakes (or bread crumbs) and beaten egg. Add the tomato soup (or juice) and seasonings. Mix thoroughly. Pack firmly into a loaf pan to shape the meatloaf. Turn the meatloaf out into a small roasting pan. Pour the boiling water over the meatloaf. Place the 4 slices of bacon across the top of the meatloaf. Bake at 350* for 30 to 35 minutes.
