mom's meatloaf
My Mom made this frequently when I was growing up. When I moved north for college I rang her up for the recipe. It was full of hand fulls of this, a couple of glugs of that, and "until it looks right." I did my best to measure the ingredients. I find I go by my nose or until it smells right. LOL, my Mom would be proud!

Ingredients
- 1 pound ground beef (make sure its 80/20 or you'll have a brick)
- 1 - large egg
- 5 ounces can evaporated milk
- 2 tablespoons dried onion
- 1 tablespoon dried parsley
- 3 tablespoons worcestershire sauce
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup cracker meal
- 1/2 cup ketchup
How To Make mom's meatloaf

Step 1Preheat oven to 350 degrees. In a mixing bowl place hamburger, egg, evaporated milk, and seasonings. Hand mix until blended and a little soupy.

Step 2Add cracker meal a little at a time until well incorporated. Shape into a loaf and place in a loaf pan. Bake for 45 minutes.

Step 3Remove from oven and slice part-way through about 1 inch apart. Spread ketchup over top. Bake for another 15 minutes. Remove from oven and allow to rest at least 5 minutes.

Step 4Meatloaf sandwiches are my favorite leftovers!
