meatloaf with a great sauce

I adapted a recipe from one of my Church cookbooks. I use unsalted cracker crumbs because we are on a low sodium way of eating. Everyone says it has plenty of flavor and asks for the recipe. The sauce is truly part of the goodness with this meatloaf! If you are fortunate enough to have any left over, it makes a great sandwich!

Ingredients
- 1 1/2 pounds lean ground beef
- 1 cup cubed bread crumbs, moistened
- 1 cup cracker crumbs, crushed
- 1 - large onion, chopped
- 2 - celery stalks, diced
- 1 - green pepper, diced
- 2 - large eggs, slightly beaten
- 1/2 teaspoon salt (can add more, if desired)
- 1/4 teaspoon pepper
- 1/2 teaspoon worcestershire sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar
- 2 tablespoons molasses
- 1 cup water
- 1 - 14 oz. can of tomato sauce, divided
- 2 tablespoons wet mustard
How To Make meatloaf with a great sauce

Step 1In a large bowl, mix together the ground beef, bread crumbs, cracker crumbs, onion, celery, green pepper, eggs, salt, pepper, Worcestershire sauce, and half of the tomato sauce.

Step 2Place in a shallow baking dish.

Step 3In a small bowl, combine the apple cider vinegar, brown sugar, molasses, water, balance of tomato sauce, and mustard. Whisk until well blended.

Step 4Pour sauce over meatloaf and place in a preheated 350 degree oven. Baste sauce occasionally.
