My sister shared this recipe with me, although I did my own tweaking to suit my family. Enjoy!

Ingredients

  • 2 pounds ground beef
  • 1 3/4 -2 cup crushed, ritz crackers
  • 1 - onion, minced
  • 1 small red or green bell pepper, chopped fine
  • 2 - eggs, plus one extra yolk, beaten
  • 3/4 cup ketchup
  • 1/4 cup milk
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon each - salt & pepper
  • SAUCE FOR TOP OF MEATLOAF
  • 1/2 cup ketchup
  • 1/2 teaspoon garlic salt
  • 3/4 teaspoon dry mustard
  • 1 1/2 tablespoons mollasses
  • 1/4 teaspoon pepper

How To Make meatloaf

  • Step 1
    Preheat oven to 350 degree F. Mix all ingredients together & shape into a loaf. ( Sometimes I place a couple strip of bacon on top). Place in loaf pan or on rack over a sheet pan. Bake for an hour. Make sauce while loaf is baking: just mix all ingredients in a bowl and set aside. After loaf has baked an hour, apply sauce, evenly over the top and continue baking for another 20 - 25 minutes.
