Ingredients
- MEATLOAF
- 1 pound ground beef
- 1 pound ground pork
- 1/2 cup green pepper diced
- 1 medium onion diced
- 4 cloves garlic minced
- 1/2 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 1 large egg
- 1 tablespoon cajun seasoning
- 8 ounces can tomato sauce
- SAUCE
- 4 tablespoons butter
- 1 large onion diced
- 1 cup green pepper diced
- 3 cloves garlic minced
- 1 tablespoon dried basil
- 1 tablespoon cajun seasoning
- 1 tablespoon flour
- 1/2 cup dry red wine
- 15 ounces can petite diced tomatoes
- 8 ounces can tomato sauce
How To Make cajun meatloaf with creole sauce

Step 1Preheat oven 350 degrees. Mix all ingredients for meatloaf together and place in a greased loaf pan. Cover with foil and bake 1 hour. Remove foil and bake another 15 minutes to brown.

Step 2Sauce Place butter in skillet. Once melted and hot stir in green pepper, onion and garlic. Cook until tender. Stir in the basil, and Cajun seasoning. Deglaze the pan with the wine scrapping up bits and let most evaporate. Stir in the flour then the tomatoes and tomato sauce. Cook until thickened. Transfer to a food processor or immersion blender and blend until smooth.
