  • ·
    8 ears fresh corn, cut off cob (or frozen corn)
  • ·
    1 can black beans (rinsed and well drained)
  • ·
    2 fresh tomatoes chopped (or 1 large can petite diced tomatoes drained well )
  • ·
    1/2 red onion, chopped
  • ·
    1 bunch of fresh green scallions, chopped
  • ·
    1 red bell pepper, chopped
  • ·
    1 bunch fresh cilantro, chopped
  • ·
    juice of 3 limes
  • ·
    kosher salt and cracked black pepper to taste
  • ·
    fresh avocado, cut into large chunks [optional, add just before serving]
  • 1/2 c
    olive oil
  • ·
    1 clove garlic, chopped [optional]

How to Make Fresh Corn and Black Bean Salad


  1. Mix everything together and let sit at room temperature for at least 30 minutes. Serve at room temperature.
  2. I don't use the avoocado. I also add some olive oil.
