8 ears fresh corn, cut off cob (or frozen corn)
1 can black beans (rinsed and well drained)
2 fresh tomatoes chopped (or 1 large can petite diced tomatoes drained well )
1/2 red onion, chopped
1 bunch of fresh green scallions, chopped
1 red bell pepper, chopped
1 bunch fresh cilantro, chopped
juice of 3 limes
kosher salt and cracked black pepper to taste
fresh avocado, cut into large chunks [optional, add just before serving]
1/2 c
olive oil
1 clove garlic, chopped [optional]

How to Make Fresh Corn and Black Bean Salad


  • 1Mix everything together and let sit at room temperature for at least 30 minutes. Serve at room temperature.
  • 2I don't use the avoocado. I also add some olive oil.
