fresh corn and black bean salad

Ingredients For fresh corn and black bean salad

  • 8 ears fresh corn, cut off cob (or frozen corn)
  • 1 can black beans (rinsed and well drained)
  • 2 fresh tomatoes chopped (or 1 large can petite diced tomatoes drained well )
  • 1/2 red onion, chopped
  • 1 bunch of fresh green scallions, chopped
  • 1 red bell pepper, chopped
  • 1 bunch fresh cilantro, chopped
  • juice of 3 limes
  • kosher salt and cracked black pepper to taste
  • fresh avocado, cut into large chunks [optional, add just before serving]
  • 1/2 c
    olive oil
  • 1 clove garlic, chopped [optional]

How To Make fresh corn and black bean salad

    Mix everything together and let sit at room temperature for at least 30 minutes. Serve at room temperature.

    I don't use the avoocado. I also add some olive oil.
