This is easy enough to change to a non-vegetarian dish -- shredded beef, chicken or pork, ground beef -- or even shredded left-over turkey after Thanksgiving!

Ingredients

  • 4 cups romaine lettuce leaves, chopped
  • 1/2 medium white onion, thinly diced
  • 1 - roma tomato, diced
  • 1/2 cup corn
  • 1/2 cup green pepper, diced
  • 1/2 cup tortilla chips, broken into pieces
  • DRESSING
  • 1 small can chipotle peppers
  • 1 teaspoon olive oil
  • 2 tablespoons half and half
  • - salt and pepper

How To Make chipotle taco salad

  • Step 1
    Combine all salad ingredients except for the chips in a bowl.
  • Step 2
    In a processor or blender, add all dressing ingredients and pulse until smooth.
  • Step 3
    Pour dressing over salad and top with chips.
