All measurements are approximate as I don't measure anything unless I am baking... LOL! I served this over creamy parmesan rice with a side of fresh steamed green beans and homemade drop biscuits. My husband-to-be absolutely loved it.

Pan Fry


  • SAUCE:

  • 1 Tbsp
    olive oil
  • 1 Tbsp
    fresh garlic, minced
  • 1 small
    red onion, chopped fine
  • 3/4 c
    white wine (optional)
  • 1/4 c
    chicken broth (if omitting wine, use a full cup)
  • 2 Tbsp
  • 7 oz
    large pitted black olives, halved & sliced (can use green olives, too, or a combination of both)
  • 8 oz
    tomatoes, canned italian-style and diced
  • 1 1/2 tsp
    lemon-pepper seasoning, or use 1/8 cup lemon juice
  • 1 Tbsp
    freeze-dried italian herb blend seasoning, i use litehouse brand

  • 2 Tbsp
    olive oil
  • 1 Tbsp
  • 4
    tilapia fillets
  • 1 tsp
    lemon-pepper seasoning, to taste

How to Make Tilapia Tuscany


  1. Make the sauce:
  2. Heat olive oil in a 10" skillet over medium-high heat. Add garic & red onion, cook until soft and lightly browned, about 2-3 mins
  3. Add white wine to skillet. Once the flames have died out, reduce heat to medium.
  4. Add remaining sauce ingredients to skillet. Bring to a boil, reduce heat to med-low and allow to gently simmer until you're finished preparing and frying the tilapia, approx. 15 mins. If the sauce get too thick, add more wine or chicken stock.
  5. Cook the Tilapia:
  6. Sprinkle both sides of the tilapia filets with lemon-pepper seasoning and kosher salt to taste.
  7. Combine olive oil and butter in a large skillet over med-high heat.
  8. Pan-fry seasoned tilapia filets in oil mixture, turning once, until opaque and fish flakes easily with a fork. (about 5 minutes each side, depending on thickness of filet)
  9. Top each tilapia filet with a spoonful of the sauce and enjoy!
