All measurements are approximate as I don't measure anything unless I am baking... LOL! I served this over creamy parmesan rice with a side of fresh steamed green beans and homemade drop biscuits. My husband-to-be absolutely loved it.

Ingredients
- SAUCE:
- 1 tablespoon olive oil
- 1 tablespoon fresh garlic, minced
- 1 small red onion, chopped fine
- 3/4 cup white wine (optional)
- 1/4 cup chicken broth (if omitting wine, use a full cup)
- 2 tablespoons capers
- 7 ounces large pitted black olives, halved & sliced (can use green olives, too, or a combination of both)
- 8 ounces tomatoes, canned italian-style and diced
- 1 1/2 teaspoons lemon-pepper seasoning, or use 1/8 cup lemon juice
- 1 tablespoon freeze-dried italian herb blend seasoning, i use litehouse brand
- TILAPIA:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 - tilapia fillets
- 1 teaspoon lemon-pepper seasoning, to taste

Step 1Make the sauce:

Step 2Heat olive oil in a 10" skillet over medium-high heat. Add garic & red onion, cook until soft and lightly browned, about 2-3 mins

Step 3Add white wine to skillet. Once the flames have died out, reduce heat to medium.

Step 4Add remaining sauce ingredients to skillet. Bring to a boil, reduce heat to med-low and allow to gently simmer until you're finished preparing and frying the tilapia, approx. 15 mins. If the sauce get too thick, add more wine or chicken stock.

Step 5Cook the Tilapia:

Step 6Sprinkle both sides of the tilapia filets with lemon-pepper seasoning and kosher salt to taste.

Step 7Combine olive oil and butter in a large skillet over med-high heat.

Step 8Pan-fry seasoned tilapia filets in oil mixture, turning once, until opaque and fish flakes easily with a fork. (about 5 minutes each side, depending on thickness of filet)

Step 9Top each tilapia filet with a spoonful of the sauce and enjoy!
