Ingredients

  • SALAD

  • 24 oz
    mixed lettuces (tender green tango, red oak, sweet frisee, lollo rossa)
  • 2 small
    mango, diced
  • 1
    avocado, diced
  • 1 small
    red onion, diced
  • 2 lb
    salmon fillet
  • 8 oz
    alfalfa sprouts
  • 2 Tbsp
    sesame seeds
  • 2 Tbsp
    chia seeds
  • 2 Tbsp
    sunflower seeds
  • VINAIGRETTE

  • 6 c
    mango puree
  • 3 Tbsp
    honey
  • 2 tsp
    mustard
  • 2 Tbsp
    lemon juice
  • ·
    salt and pepper to taste
  • 3/4 c
    red wine vinegar
  • 1 3/4 c
    olive oil

How to Make Salmon with Mango Vinaigrette

Step-by-Step

  1. Wash vegetables thoroughly.
  2. Cut the mango, avocado and the onion into small cubes.
  3. Remove the skin from the fish fillet and cut into 1 inch cubes.
  4. Brush the salmon cubes with olive oil.
  5. Grill the salmon cubes for 5 to 6 minutes.
  6. Meanwhile, in a bowl, combine mango puree, honey, mustard, lemon, vinegar, salt and pepper and let infuse for a few minutes.
  7. Add olive oil to mixture slowly while mixing continuously until emulsified.
  8. Adjust seasoning to taste.
  9. In 8 small bowls add the lettuce, avocados, onions, handle and the salmon
  10. Top with vinaigrette and alfalfa sprouts and seeds
