You can also use two boxes of jiffy corn muffin mix in place of flour and meal. This was my husband's grandmother's recipe and before making it this way, my kids wouldn't eat it. Now all will but one.

Ingredients
- 6 cans pink salmon
- 6 large eggs
- 1 medium onion (diced)
- 1 1/2 cups flour
- 1 1/2 cups corn meal
- - salt,pepper and garlic salt to taste

Step 1Drain and De-bone salmon. (Note: you only have to take out the vertebrae, the other bones will cook away.

Step 2Mix all ingredients together thoroughly.

Step 3Fill bottom of skillet with a thin layer of cooking oil.

Step 4Patty up the fish thinly. Fry until golden brown. Make sure you use as little oil as possible so patties won't be greasy.
