- 4 oz. cod filets
- 3 Tbsp
- melted butter
- 1/2 tsp
- dijon mustard
- 1/2 c
- coarsely chopped macadamia nuts
- 1/4 c
- panko breadcrumbs
- 1 tsp
- lemon zest
How to Make MACADAMIA-CRUSTED COD
- 1For the topping: In a small bowl stir together butter & mustard until smooth. Stir in nuts, breadcrumbs & lemon zest; mix well. Set aside.
- 2Place filets on a large rimmed baking sheet coated with nonstick cooking spray; season filets with salt & pepper to taste
Spoon topping evenly on each filet, pressing gently to adhere.
- 3Preheat oven to 450^. Bake 10 minutes per inch of thickness or until fish turns from glassy to opaque.
