Ingredients

  • 2
    cod fillets
  • 1 1/2 c
    water
  • 1/2 c
    jasmine rice
  • 2 Tbsp
    olive oil
  • 1 tsp
    salt
  • 1/2 c
    frozen peas
  • 3
    nobs of ginger peeled
  • 2
    lemons one juiced and one sliced thinly
  • 1/2 c
    white wine
  • 1/2 c
    butter
  • 1
    shallot minced
  • 1/4 c
    heavy cream

How to Make Ginger steamed Cod Lemon Butter & Pea Rice

Step-by-Step

  1. Salt Cod and set aside.
  2. Add water, olive oil, salt, rice and peas to pan and bring to a boil. Cover and simmer 20 minutes or until rice is cooked.
  3. Heat wine and shallot in a saucepan. Bring to a boil and reduce until only 2 tbsp. liquid remain. Reduce to low and whisk in butter a few pieces at a time. Whisk in cream and lemon juice of 1 lemon. Set aside.
  4. Peel ginger and slice into four slices lengthwise. Place in steamer, I used a bamboo steamer. Place Cod on top of ginger and top with lemon slices. Place top on steamer and place over boiling water. Steam about 5 to 7 minutes until fish is done.
  5. To serve place pea rice on plate. Top with Cod and drizzle lemon butter sauce over top.
