Ingredients
- 2 - cod fillets
- 1 1/2 cups water
- 1/2 cup jasmine rice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 cup frozen peas
- 3 - nobs of ginger peeled
- 2 - lemons one juiced and one sliced thinly
- 1/2 cup white wine
- 1/2 cup butter
- 1 - shallot minced
- 1/4 cup heavy cream
How To Make ginger steamed cod lemon butter & pea rice

Step 1Salt Cod and set aside.

Step 2Add water, olive oil, salt, rice and peas to pan and bring to a boil. Cover and simmer 20 minutes or until rice is cooked.

Step 3Heat wine and shallot in a saucepan. Bring to a boil and reduce until only 2 tbsp. liquid remain. Reduce to low and whisk in butter a few pieces at a time. Whisk in cream and lemon juice of 1 lemon. Set aside.

Step 4Peel ginger and slice into four slices lengthwise. Place in steamer, I used a bamboo steamer. Place Cod on top of ginger and top with lemon slices. Place top on steamer and place over boiling water. Steam about 5 to 7 minutes until fish is done.

Step 5To serve place pea rice on plate. Top with Cod and drizzle lemon butter sauce over top.
