The fish is so flavorful and moist. The lemon butter sauce is rich and tangy. A real hit at my house

Ingredients

  • 2 - cod fillets
  • 1 1/2 cups water
  • 1/2 cup jasmine rice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 cup frozen peas
  • 3 - nobs of ginger peeled
  • 2 - lemons one juiced and one sliced thinly
  • 1/2 cup white wine
  • 1/2 cup butter
  • 1 - shallot minced
  • 1/4 cup heavy cream

How To Make ginger steamed cod lemon butter & pea rice

  • Step 1
    Salt Cod and set aside.
  • Step 2
    Add water, olive oil, salt, rice and peas to pan and bring to a boil. Cover and simmer 20 minutes or until rice is cooked.
  • Step 3
    Heat wine and shallot in a saucepan. Bring to a boil and reduce until only 2 tbsp. liquid remain. Reduce to low and whisk in butter a few pieces at a time. Whisk in cream and lemon juice of 1 lemon. Set aside.
  • Step 4
    Peel ginger and slice into four slices lengthwise. Place in steamer, I used a bamboo steamer. Place Cod on top of ginger and top with lemon slices. Place top on steamer and place over boiling water. Steam about 5 to 7 minutes until fish is done.
  • Step 5
    To serve place pea rice on plate. Top with Cod and drizzle lemon butter sauce over top.
