Fresh garden veggies and herbs make for a yummy tuna salad sandwich. I added 10 minutes cooking time for the boiled egg. The citrus grill seasoning has dehydrated citrus peel and other great goodies which made this sandwich a real treat!

Ingredients

  • 5 ounces tuna, canned
  • 1 - egg, hard boiled
  • 1/2 - medium cucumber, chopped
  • 2 - sweet mini peppers
  • 1/4 cup chopped fennel or celery
  • 1/4 small onion, chopped
  • 1 tablespoon flat parsley, fresh
  • 1 tablespoon chives, fresh
  • 1 tablespoon dill, fresh
  • 1/4 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1/2 tablespoon citrus grill seasoning - i used tones brand
  • 2 - sandwich rolls
  • 6 - sharp cheddar cheese, sliced
  • 1/2 cup shredded lettuce
  • - crumbled crispy cooked bacon or bacon bits

How To Make garden harvest tuna salad subs

  • Step 1
    In a medium bowl add drained tuna, and finely chopped egg.
  • Step 2
    In your food processor add cucumber, fennel, onion, sweet pepper, and fresh herbs. Pulse until fine. Add to tuna and egg.
  • Step 3
    Add mayo, mustard, honey, and seasoning. Stir to combine. Let sit in refrigerator until ready to serve for flavors to combine about 20 minutes.
  • Step 4
    On sandwich roll place chopped lettuce, slice cheese, and a spoon tuna filling. Top with crumbled bacon and enjoy!
