I like my catfish spicy, so I use a Tbsp. of cayenne. You can adjust yours to fit your tastes.

    catfish filets
  • 1/2 c
    flour
  • 1/2 c
    corn meal
  • ·
    cayenne pepper, to taste
  • 2
    eggs, beaten
  • ·
    oil

How to Make Fried Catfish

Step-by-Step

  1. In a shallow pan, mix flour, corn meal and cayenne pepper very well.
  2. Dip filets in the egg.
  3. Then dredge in the flour mixture to coat.
  4. Heat oil in a skillet or deep fryer. Use enough oil to cover the fish.
  5. Cook until fish is done and flakes easily, Be sure not to crown the filets when frying.
