- 6 - catfish filets
- 1/2 cup flour
- 1/2 cup corn meal
- - cayenne pepper, to taste
- 2 - eggs, beaten
- - oil
How To Make fried catfish

Step 1In a shallow pan, mix flour, corn meal and cayenne pepper very well.

Step 2Dip filets in the egg.

Step 3Then dredge in the flour mixture to coat.

Step 4Heat oil in a skillet or deep fryer. Use enough oil to cover the fish.

Step 5Cook until fish is done and flakes easily, Be sure not to crowd the filets when frying.
