The first time I served this to my husband I could see in his face he was thinking "I don't think I'm gonna like this" but once he tasted it he loved it. It is a staple at our house now. Low calorie and fat and good for you.

Ingredients

  • 1/2 cup diced carrot
  • 1/2 cup diced fennel bulb
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 can 14.5 oz. crushed tomatoes
  • 1 cup water
  • 1/2 cup dry white wine
  • 1/4 cup dices kalamata olives
  • 2 tablespoons capers
  • - zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 4 medium cod fillets skin removed. can use red snapper, or any firm white fish of your choice

How To Make fish in crazy water with fennel

  • Step 1
    Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.
  • Step 2
    Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.
  • Step 3
    Add Cod and cover pan and poach until done 8 to 10 minutes.
