The first time I served this to my husband I could see in his face he was thinking "I don't think I'm gonna like this" but once he tasted it he loved it. It is a staple at our house now. Low calorie and fat and good for you.

diced carrot
1/2 c
diced fennel bulb
2 clove
garlic minced
2 Tbsp
olive oil
1 can(s)
14.5 oz. crushed tomatoes
1 c
1/2 c
dry white wine
1/4 c
dices kalamata olives
2 Tbsp
zest of 1 lemon
1 Tbsp
lemon juice
1/2 tsp
1/2 tsp
red pepper flakes
4 medium
cod fillets skin removed. can use red snapper, or any firm white fish of your choice

How to Make Fish in Crazy Water with Fennel


  • 1Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.
  • 2Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.
  • 3Add Cod and cover pan and poach until done 8 to 10 minutes.
