The first time I served this to my husband I could see in his face he was thinking "I don't think I'm gonna like this" but once he tasted it he loved it. It is a staple at our house now. Low calorie and fat and good for you.

  • 1/2 c
    diced carrot
  • 1/2 c
    diced fennel bulb
  • 2 clove
    garlic minced
  • 2 Tbsp
    olive oil
  • 1 can(s)
    14.5 oz. crushed tomatoes
  • 1 c
  • 1/2 c
    dry white wine
  • 1/4 c
    dices kalamata olives
  • 2 Tbsp
  • ·
    zest of 1 lemon
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
  • 1/2 tsp
    red pepper flakes
  • 4 medium
    cod fillets skin removed. can use red snapper, or any firm white fish of your choice

How to Make Fish in Crazy Water with Fennel


  1. Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.
  2. Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.
  3. Add Cod and cover pan and poach until done 8 to 10 minutes.
