fish in crazy water with fennel
The first time I served this to my husband I could see in his face he was thinking "I don't think I'm gonna like this" but once he tasted it he loved it. It is a staple at our house now. Low calorie and fat and good for you.

Ingredients
- 1/2 cup diced carrot
- 1/2 cup diced fennel bulb
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 can 14.5 oz. crushed tomatoes
- 1 cup water
- 1/2 cup dry white wine
- 1/4 cup dices kalamata olives
- 2 tablespoons capers
- - zest of 1 lemon
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 4 medium cod fillets skin removed. can use red snapper, or any firm white fish of your choice
How To Make fish in crazy water with fennel

Step 1Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.

Step 2Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.

Step 3Add Cod and cover pan and poach until done 8 to 10 minutes.
