Curry IN A HURRY SHRIMP!
1/2 lbuncooked shrimp(shelled)
1 smallsweet onion(chopped)
1 stalk(s)celery (chopped)
2-3 clovegarlic (chopped)
2 Tbsphot curry paste
1 Tbspregular curry powder
4 Tbspdry sherry
3/4 can(s)coconut milk, unsweetened
1/4 cchicken broth
2-3 Tbspwater chestnuts
2 Tbspsoy sauce
How to Make Curry IN A HURRY SHRIMP!
- Shell ,and clean shrimp,set aside.
In 2 tablespoons of olive oil, warm, the curries, for a few seconds then add onions, celery,garlic, cook until soft.
- Turn heat up, add sherry,stir, then turn heat to med.,add,chicken stock,and coconut milk,soy sauce.
Now is the time I add any vegetable I want.Peas are great here,bokchoy, your water chestnuts.
Add your shrimp,cover, 5 min. they should be done.
- I like to serve this over fragrant Jasmine rice.
Sprinkle with the cilantro, and lime juice.
