clams casino my way
I was tired of ordering or buying stuffed clams and getting mostly bread crumbs. Growing up in Frank Sinatra's home state in an Italian family I needed to perfect this recipe. This is my version with enough clams you actually see and taste them. Bacon is key here

Ingredients
- 14 ounces choppeed clms drained
- 1 small green pepper finely chopped
- 1 small onion finely chopped
- 1 teaspoon minced garlic
- 1/2 cup butter
- 1 1/2 cups italian seasoned bred crumbs(i use progresso)
- 1/4 cup dry white wine(chardonney)
- 1/4 cup fresh lemon juice
- 2 ounces diced pimento
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon tabasco ( use more or less to taste)
- 5 slices thinely sliced bacon
How To Make clams casino my way

Step 1In a medium skillet, saute the freen pepper, onion and garlic in the butter; Cool

Step 2Cut bacon strips in chunks and saute until cooked but not crispy.

Step 3Add the bacon, clams, bread crumbs, wine, lemon juice pimento, cayenne pepper, Tabasco and salt to the vegetables in the skillet and mix well.

Step 4If you have large clam shells stuff the clam mixture into them. If you don't have those put the mixture into an 8x8 greased dish. Bake on a cookie sheet for 15 to 20 minutes at 350*F. Great for a main course luncheon dish or a first course.
