This can be cooked on a stove top in a dutch oven.This is a very healthy meal.Make it as hot or mild as you like.

Ingredients

  • 3 pounds diced chicken (boneless breast)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon taco seasoning mix (listed below)
  • 2 cans chicken stock
  • 1 can corn drained
  • 1 can black beans rinsed and drained
  • 2 cans great northern beans(don't drain)
  • 1 can rotel chili fixin's
  • 1 cup med picante sauce
  • 1/4 cup pickled jalapenos slices (diced)
  • package mexican cheese blend
  • TACO SEASONING
  • 1 1/2 tablespoons chili power
  • 1 teaspoon salt
  • 1/2 Ground teaspoon ground cumin
  • 1/8 teaspoon garlic

How To Make white bean chicken chili

  • Step 1
    Combine all ingredients except cheese in a crock pot or dutch oven.
  • Step 2
    Set crock pot on high for 3 hours.
  • Step 3
    Add cheese or a small amount of cornstarch in cold water it will help thicken the chili.
  • Step 4
    Cook until desired thickness if using cornstarch.
  • Step 5
    Top with cheese. Serve with corn bread or chips.
  • Step 6
    1 1/2 tbsp Chili Power
  • Step 7
    1 tsp Salt
  • Step 8
    1/2 tsp Ground Cumin
  • Step 9
    1/8 tsp Garlic
