Ingredients
- 4 large yucon gold potatoes sliced thin
- 8 ounces mushrooms sliced
- 2 tablespoons canola oil
- 2 tablespoons olive oil
- 4 tablespoons parmesan cheese
- 4 cloves garlic minced
- 3 teaspoons fresh rosemary minced
- 2 teaspoons fresh thyme minced
- 6 - chicken thighs
- - salt and pepper
How To Make tuscany chicken

Step 1Preheat oven 425 degrees.

Step 2Arrange potatoes in baking pan. Top with mushrooms. Drizzle the olive oil, half the parmesan, garlic, rosemary, thyme, salt and pepper. Set aside.

Step 3Pour the 2 tbsp. of canola oil in skillet. Season chicken with rosemary, thyme, salt and pepper. Add to oil then throw in garlic. Cook until browned.

Step 4Arrange the chicken on top of the potatoes and pour any oil from the pan on top. Bake 40 to 50 minutes until chicken is done.
