yucon gold potatoes sliced thin
8 oz
mushrooms sliced
2 Tbsp
canola oil
2 Tbsp
olive oil
4 Tbsp
parmesan cheese
4 clove
garlic minced
3 tsp
fresh rosemary minced
2 tsp
fresh thyme minced
6
chicken thighs
salt and pepper

How to Make Tuscany Chicken

Step-by-Step

  • 1Preheat oven 425 degrees.
  • 2Arrange potatoes in baking pan. Top with mushrooms. Drizzle the olive oil, half the parmesan, garlic, rosemary, thyme, salt and pepper. Set aside.
  • 3Pour the 2 tbsp. of canola oil in skillet. Season chicken with rosemary, thyme, salt and pepper. Add to oil then throw in garlic. Cook until browned.
  • 4Arrange the chicken on top of the potatoes and pour any oil from the pan on top. Bake 40 to 50 minutes until chicken is done.
