How To Make tostadas
-
Step 1Start by frying the tortillas,I usually fry them in canola oil,350 degrees for a minute of two per side then drain them on paper towels and lightly salt them.
-
Step 2Next is the chicken,or you can also use re-fried black beans, chili, shredded pork or sliced steak too. Totally up to you, again if you'd like the recipes for any of these fillings I'd be happy to give them to you! So,for the chicken: Rinse and clean the chicken of any grizzle or fat Place in a pot and cover with water Add the bay leaves, two cloves of garlic and half a teaspoon of salt and half a teaspoon of pepper Bring to a boil then simmer for twenty minutes. Reserve the liquid.
-
Step 3Remove the chicken from the pot, when it's cool enough to handle, shred it using two forks and place in a mixing bowl. Add the remainder of spices,1/2 cup of the liquid the chicken was boiled in and mix well.Add about one cup of the cilantro, chopped mix well. Time to build the tostadas!
-
Step 4On each tortilla spread about 2 tablespoons of chicken mixture, then the shredded lettuce or cabbage salad, salsa, guacamole, sour cream, hard boil egg slices, queso fresco, lime wedge and a few jalapenos and cilantro on top, enjoy!! Make sure you have plenty of napkins available, this dish is a bit messy to eat but oh so worth it!!
