    chicken breasts, cooked and shredded
  • 8 c
    cooked rice
  • 2 can(s)
    rotel tomatoes
  • 2 pkg
    taco seasoning
  • 2 can(s)
    whole kernel corn, drained
  • 2 can(s)
    black beans (undrained)
  • 1 can(s)
    black olives, drained
  • 6 c
    cheddar cheese, grated

How to Make Tex Mex Chicken Casserole (makes 4 casseroles)

Step-by-Step

  1. Mix together all of the ingredients in a bowl, except the cheese. Divide out into four pans, then top each with the cheddar cheese and top with cardboard topper.
  2. Write on lid: Remove cardboard piece and bake at 350 until thoroughly heated and cheese is melted (all ingredients are already cooked, so it’s just a matter of heating it well.)
  3. Serve with sour cream and salsa on top and tortilla chips.
