Ingredients
- 3 - 4 pounds skin on chicken thighs - could use a combination as well
- 1 cup flour
- 1 tablespoon garlic powder & poultry seasoning, black pepper
- 1/2 tablespoon each - cayenne, onion powder, kosher salt & paprika
- season - salt for sprinkling before placing chicken in oven - optional
- 1 stick butter

Step 1Preheat oven to 350 degree F. Mix spices together, except for seasoning salt.

Step 2Place butter in a 9 x 13 baking dish. Place in preheated oven to melt.

Step 3Wash chicken and season evenly with 1/2 the spice mix. Save the remainder to add to flour. Season under the skin as well.

Step 4Add remaining seasoning to the flour in a plastic bag. Shake well to mix.

Step 5Place one or 2 pieces of chicken at a time into the bag and evenly coat. Place floured chicken into the baking dish. Sprinkle with some season salt and bake for 1 hour and 15 minutes to 1 hour and 30 minutes. You want the skin crispy and the chicken good and tender.
